How to create Stripe Buttercream using ProGel

Learn how to create Striped Buttercream Cake with Simone Taylor.

Base Colour

  • Cover the cake completely in one solid colour of buttercream (this will be your stripe background).
  • Smooth with a bench scraper until clean and even.
  • Chill the cake until firm (important as this keeps the stripes sharp).

Create the Grooves

  • Hold the striped cake comb against the chilled cake.
  • Spin the turntable while gently pressing the comb into the frosting.
  • This scrapes away evenly spaced stripes, leaving “grooves” for your second colour.
  • Scrape until you see clear grooves without smearing. Chill again.

Fill in the Stripes

  • Tint your second batch of buttercream the contrasting colour.
  • Put it in a piping bag and pipe buttercream directly into the grooves.
  • Don’t worry about neatness you’ll smooth it out later.

Smooth Everything

  • Use a bench scraper to remove excess frosting, revealing sharp stripes.
  • You may need to add more colour and scrape again until it’s perfect.
