What's the difference between sugarpaste and modelling paste?

Sugarpaste is softer and ideal for covering cakes - it stays pliable longer and smooths easily. Sugarpaste is also great for basic shapes like stars and hearts. Modelling paste dries harder abut when working with its to create models it has more flexibility - making it perfect for figures, and decorations that need to hold their shape. You can also mix the pastes together to create a paste you want.

How much sugarpaste do I need to cover my cake?

As a rough guide: 500g covers a 6" round, 750g covers an 8" round, and 1kg covers a 10" round (single tier). Always allow extra for trimming. The 2.5kg covering paste is perfect for larger cakes or multiple tiers.

Can I freeze decorated cakes or sugarpaste?

Yes! Squires Kitchen sugarpaste is freeze/thaw stable. Wrap your decorated cake well and freeze. When defrosting, remove wrapping immediately to prevent condensation marking the surface. The paste may feel slightly soft initially but will firm up.

How do I get a perfectly smooth finish?

Start with properly prepared buttercream or ganache underneath. Knead your sugarpaste until pliable, roll on a surface dusted with icing sugar, and use smoothers in circular motions. For ultra-white coverage, add icing whitener during kneading.
