What is edible gold and silver leaf made from?

Our edible leaf is made by compressing real precious metal until it is extremely thin, so it is 100% edible with a bright, radiant shine. The gold leaf is 24 carat gold (E175) and the silver leaf is pure silver (E174), with no added colours or flavours. A little goes a long way, adding a genuinely luxurious touch to your creations.

What is the difference between leaf flakes and transfer sheets?

Gold and silver leaf flakes come loose in a pot and are applied with tweezers or a brush for a scattered, organic look. Gold leaf transfer sheets and silver leaf transfer sheets come on a backing that lets you lay down clean, even coverage without the leaf sticking to your hands. Both give the same radiant shine, so it comes down to the effect you are after.

How do you apply edible gold and silver leaf?

Lightly dampen the surface of your sugarpaste, chocolate or sugar work with a brush and a little cooled, boiled water, then allow it to become tacky. For flakes, lift the amount you need with tweezers or a brush and press it into place; for transfer sheets, lay the sheet metal side down, smooth over the backing and peel it away. For extra adhesion you can brush the surface with edible glue first.

Why should I avoid touching the leaf with my fingers?

Edible leaf is incredibly delicate, so handling it directly can cause it to break, tarnish or stick to your skin. With transfer sheets, keep the backing intact and handle the sheet by that backing until it is in position. It is also worth protecting nearby areas of your design to stop any stray leaf transferring where you do not want it.

How do you store edible gold and silver leaf?

Keep leaf flakes in their jar, stored upright in a cool, dry and dark place. Transfer sheets are best left in their original packet, resealed with a clip once opened so they stay flat and protected. Stored well, your leaf will stay bright and ready for your next project.
