Chocolate Colouring

Colouring chocolate is its own discipline. Water-based colours seize it, which is why you need an oil-based cocoa butter colour like Squires Kitchen COCOL. Warm the jar gently in the microwave, give it a shake, and you have vibrant colour ready to brush into moulds, paint onto bonbons or load into an airbrush. It works hardest over white chocolate, where the eight shades really sing, and every colour is fully intermixable so you can blend your own. Why can't I use normal food colouring in chocolate?

Water-based colours make chocolate seize and turn grainy. COCOL is a cocoa butter colour, so it blends in smoothly without splitting the chocolate.

How do you use cocoa butter colours?

Warm the jar gently in the microwave to melt it, shake or stir, then brush, paint or airbrush it on. It works best over white chocolate.

Can you mix the colours?

Yes. All eight COCOL shades are fully intermixable, so you can blend your own custom shades.
