Made in Preston, refined where it matters

Rainbow Dust's Squires Kitchen Sugarpaste is still made at our Preston headquarters on the same BRC AA+ accredited line that has supplied professional decorators for over twenty five years. The recipe is what has changed.

The new formula has more stretch and flexibility. Decorators can roll thinner without tearing, which makes a real difference on larger and tiered cakes where the paste has to stretch over a deeper surface in one piece. The texture is smoother straight out of the pack, and the vanilla flavour has been improved enough that testers picked up on it before being told.

Sharp, clean edges are where most decorators judge a sugarpaste. The new recipe holds them through to the finished cake rather than rounding off as the paste settles.

What is Sugarpaste?

Sugarpaste is a ready to roll icing made from sugar, glucose, and a small amount of vegetable fat. It is the smooth, pliable covering that gives celebration cakes their flawless, polished finish. It can be rolled, draped, sculpted, and coloured, which is why it is the go to for everything from wedding cakes to character toppers.

What is the difference between sugarpaste and fondant?

In the UK the two terms are used interchangeably and refer to the same product. American recipes sometimes use fondant to mean a poured icing rather than a rollable paste, but on a UK product label sugarpaste and fondant mean the same thing. The new Rainbow Dust Sugarpaste sits in the ready to roll fondant category.

How much sugarpaste do I need to cover a cake?

As a rough guide for a round cake: 500g covers a 6 inch, 750g covers an 8 inch, 1kg covers a 10 inch, and 1.25kg covers a 12 inch. Square cakes need slightly more. Add another 250g if you are also covering the cake board. The 1kg packs work well for tiered builds where you want to cover board and cake from the same colour batch.

How do you stop sugarpaste cracking or tearing?

Three things make the biggest difference. Knead the paste properly before rolling so it warms up and becomes pliable. Roll on a flat surface lightly dusted with icing sugar or cornflour, never flour. And do not roll thinner than the paste can hold, around 4mm to 5mm is the sweet spot for covering work. The new Rainbow Dust Sugarpaste has been reformulated with more stretch, so it tolerates thinner rolling without splitting at the corners.

How do you store sugarpaste?

Once opened, wrap any unused sugarpaste tightly in cling film and keep it in an airtight container in a cool, dry place out of direct sunlight. Never refrigerate. Sealed properly it will stay workable for months. If it dries out, a few drops of cooled boiled water kneaded through will soften it back up.

Can you colour sugarpaste?

Yes. Knead a small amount of gel food colouring into the paste before rolling. Gel colours such as ProGel are concentrated enough that you get vibrant shades without making the paste sticky. Build the colour up gradually, you can always add more, but you cannot take it out once kneaded in. Avoid liquid colours for this job, they thin the paste too much.
