Gum tragacanth is the traditional way to turn sugarpaste into a paste that holds fine detail. Stir a little into your sugarpaste and it firms up for modelling, or use it to make your own flower and modelling paste from scratch, the way a lot of professional sugar florists still prefer. It is plant based, drawn from the Astragalus plant, and sets decorations hard so petals and figures keep their shape. Finely milled so it blends in without lumps, and formulated to leave no taste, smell or colour behind. Made in Preston to BRC food safety standards, and halal, kosher, vegan and vegetarian. Available in 25g and 50g pots. If you would rather a modern alternative, tylose (CMC) powder does a similar job.
