Tragacanth gum

Gum Tragacanth is a natural gum made from the sap of the Astragalus plant.

When mixed with sugarpaste, Gum Tragacanth powder gives the sugarpaste a firmer consistency making it easier to roll thinly and dry harder to preserve shape and detail. This makes it perfect for creating 3D sugarpaste models and flowers.

Simply add around 10g of Gum Tragacanth powder for every 250g of sugarpaste, knead it in thoroughly and leave to rest for 2 – 3 hours before using.

Gum Tragacanth powder can also be used to thicken Royal Icing and lengthen its drying time.

Gum Tragacanth powder should be stored at ambient room temperature in a moisture resistant container.
