Easy Peasy Spiced Orange Gingerbread Men

Created by our Baking Ambassador Lea, owner of The Blondie Baker, this recipe is perfect for the festive season!

Makes 12. Gingerbread man cutter size 10cm x 8cm.

Baking Ingredients

- 230g plain flour

- ½ tsp baking powder

- 1.5 tsp ground ginger

- 1 tsp ground cinnamon

- ½ tsp mixed spice

- 45g butter (very soft)

- 75g brown sugar

- 1 small egg

- 1 tsp orange extract

- 60g maple syrup

- Orange ProGel

Instructions

1.  Add all the ingredients into a large mixing bowl, add a few drops of orange ProGel.

2. With a paddle beater mix all the ingredients together until it forms a soft dough ball. You can do this by hand on a worktop, it just takes a little more elbow grease!

3. Wrap in cling film and place into the fridge for 30 minutes.

4. Preheat the oven to Fan 160°C /180°C / 350°F, Gas 4. Line 2 baking trays with greaseproof paper.

5. Take the dough out of the fridge and cut in half. Wrap one half and return to the fridge.

6. Place the dough on your work top, sprinkle the surface very lightly with flour. Roll the dough out until it’s about 5mm thick using a rolling pin.

7. Use a gingerbread cookie cutter to cut out 6 gingerbread men.  Gently transfer them onto the baking sheet, place them into the middle of the oven and bake for 8-9 minutes. Watch the hands and feet don’t over brown too much!

8. Work on the next batch while these are baking.

9. Remove the first batch when done and allow to cool on the baking sheet, once cooler to the touch, gently transfer them to a cooling rack.

10.  Decorate with Squires Kitchen Royal Icing in a piping bag, add smarties for buttons. Enjoy!
