Lemon & Blueberry Biscuits

Baking Ingredients
For the biscuits:
- 115 g unsalted butter, softened
- 100 g caster sugar
- 1 large egg
- Zest of 1 lemon
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 180 g plain flour
- ½ tsp baking powder
- ¼ tsp salt
Decorating Ingredients
For the blueberry frosting:
- 75 g fresh or frozen blueberries
- 1 tsp lemon juice
- 115 g unsalted butter, softened
- 220–250g icing sugar
- ½ tsp vanilla extract
- Lilac ProGel
For Decoration:
- Fresh blueberries
- Violet Shimmer Dust
- Lemon wedges
Method
1. Make the Biscuits
- Preheat oven to 180°C (160°C fan) and line a baking tray with parchment.
- Cream the butter and sugar together until pale and fluffy.
- Beat in the egg, lemon zest, lemon juice, and vanilla.
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually mix the dry ingredients into the wet mixture until a soft dough forms.
2. Shape and Bake
- Divide the dough into 12 equal balls.
- Place on the tray and gently flatten slightly.
- Bake for 10-12 minutes until lightly golden at the edges.
- Cool completely on a rack.
3. Make the Blueberry Frosting
- In a small saucepan, cook the blueberries and lemon juice over medium heat until soft (about 3–4 minutes).
- Mash and strain through a sieve to remove skins.
- Let the blueberry purée cool completely.
4. Prepare the Frosting
- Beat the butter until smooth.
- Gradually add icing sugar until fluffy.
- Mix in vanilla and 1–2 tsp blueberry purée.
- Add a tiny drop of lilac ProGel and mix until you reach a soft blueberry-lilac colour.
5. Decorate
- Spread or pipe frosting onto the cooled biscuits.
- Optional: top with a fresh blueberry or lemon zest. You can use our shimmer dust range to give your fruit that extra sparkle.
