Isomalt is a sugar substitute which, unlike sugar, won’t caramelise when heated. This means it can be melted, sculpted and will dry transparent with a glassy look and texture. Perfect for creating hard sweets, lollipops and sugarcraft decorations such as gems, mosaics and pulled-sugar sculptures.
Isomalt comes in two forms: raw or pre-tempered. Before use, raw isomalt needs to be heated and cooled to specific temperatures in order to create the underlying crystalline structure required. Pre-tempered isomalt has already been through this process so is ready to use straight from the pack.
Squires Kitchen isomalt is pre-tempered so simply place the desired amount of isomalt into a microwaveable container. Melt in the microwave in 30-second increments until the isomalt becomes fluid. Carefully remove the isomalt from the microwave using ovenproof gloves, taking great care as the isomalt will be extremely hot. Gently stir, wait for the bubbling to stop then slowly pour into the desired amount of isomalt into your mould or onto a heatproof flat surface to sculpt with utensils.
Store in a cool, dry place out of direct sunlight. Isomalt can be re-used after heating. Pour any leftover isomalt onto a non-stick surface, leave to cool and store in a tightly sealed container for up to 2 years.
