Hi, I’m Victor Diaz, creator and owner of ML Bespoke Cakes.
My background in structural architecture has given me a unique understanding of how to design and construct strong, gravity-defying cake structures.
What began as a hobby while helping in a friend’s cake shop quickly grew into a true passion for cake art, creativity, and design.
About Victor
With over 15 years in the industry, I have built a strong client base that includes both national and international celebrity clients, creating bespoke birthday, novelty, and wedding cakes.
I feel incredibly privileged to bring my creative flair and distinctive style to every cake I design.
I have had the honour of competing on major television cake shows with the Food Network, and proudly winning both "The Big Bake Canada in 2023" and "The Master Baker Canada in 2025". And even creating my own rolling pins with Prop Options.
I was also recognised with the award of "Global Icon of the Year 2026" and invited to be a judge for the 3D Cake Competition in 2025.
I am proud to be part of the ambassador family for Rainbow Dust and Squires Kitchen.
