Our Go To Basic Sponge Recipe

This recipe makes 18/20 cupcakes
Cake tin sizes 2 × 20 cm (8-inch) round tins (standard sandwich cake layers) OR
1 × 20 cm (8-inch) deep tin (a single taller cake)
Baking Ingredients
225g Self Raising Flour
225g Cake Margarine
225g Caster Sugar
4 eggs
1 teaspoon Baking Powder
Method
1. Preheat the oven 180c/fan 160c/gas mark 4.
2. Measure all ingredients into a bowl.
3. Mix the margarine and sugar together until light and fluffy using an electric mixer. Add eggs one at a time until combined, then fold in the flour and baking powder.
4. Add mixture into your lined tin.
5. Place into the oven for 25 - 30 minutes.
6. Place onto a wire rack to cool decorating.
